If you love chocolate like we do, our vegan brownies loaded with nuts and seeds make a great addition to any plant-based holiday menu or summer picnic!

Vegan desserts are probably one of the hardest things to find pre-made at the store, so we’re always trying to find or create homemade versions. Our no-bake, Dairy-Free Blueberry Cheesecake, for example is fairly involved, but oh-so satisfying. On the other end of the spectrum, These vegan brownies are quick to make, requiring just one bowl and a baking dish.

The chocolate behind vegan brownies

First, let’s talk vegan chocolate. The main part of these vegan brownies with nuts is unsweetened cocoa powder. That’s a generally easy find in any grocery store’s baking aisle.

The hardest ingredient to find is dairy-free chocolate chips. If you’re new to a plant-based diet, you should know that the struggle is real when it comes to finding dairy-free chocolate in any form at a regular market.

Most semi-sweet, and even the darkest chocolates, made by familiar brands contain milk or milk fat. If you can’t find vegan chocolate chips, but can find a vegan chocolate bar, go ahead and chop that up.

We’ve found luck at places like Trader Joe’s and Whole Foods, but if those are out of reach, you can always omit chocolate chunks altogether. You can’t make vegan brownies without cocoa powder, but you can make them without chocolate chips.

Go nuts (or seeds) for these vegan brownies

The second piece of these vegan brownies is the add-ins. We’ve provided our favorite mix below, but there are really no rules here other than the total amount of them.

Only have almonds on hand? Keep it simple. Allergic to tree nuts or peanuts? Substitute all seeds and sunflower seed butter. Want to go wild? Chop up some pretzels and throw those in, too!

Vegan Brownies with Nuts and Seeds

 ¾ cup crunchy all-natural peanut butter
  cup maple syrup (or other sweetener)
 ¾ cup natural applesauce
 1 tsp vanilla extract
 ½ cup cocoa powder
 ¼ cup all-purpose flour
 ¾ tsp baking soda
 salt
 ½ cup dairy-free chocolate chips
  cup plus 1/4 cup raw seeds and/or nuts (roughly chopped) (we love pumpkin seeds, sunflower seeds, almonds, walnuts and peanuts)

Preheat the oven to 350 degrees and lightly oil an 8" x 8" pan or a loaf pan (depending on what you've got on hand and how thick you want your final brownies to be).

In a small or medium bowl, whisk together the first four ingredients until well-combined.

Add everything but the extra 1/4 cup of nuts/seeds and mix well again.

To the prepared pan, add the vegan brownie mixture, spreading it out until evenly distributed in the pan, and top with the remaining 1/4 cup of chopped nuts/seeds.

Bake for 30 minutes or until a toothpick inserted in the middle comes out relatively clean (you might pierce a chocolate chip).

Let cool completely in the pan before cutting and serving. For easier cutting, refrigerate for 30 minutes after cooled.
